This zesty lemon garlic chicken, combined with artichokes, offers a flavorful twist to your spring dinner rotation.
4 boneless, skinless chicken breasts
1 can (14 oz) artichoke hearts, drained and quartered
2 lemons, juiced and zested
4 cloves garlic, minced
1/4 cup olive oil
Salt and pepper to taste
Fresh parsley, chopped for garnish
In a large skillet, heat olive oil over medium heat.
Season chicken breasts with salt and pepper, and sear until golden, about 5 minutes each side.
Add garlic, lemon juice, zest, and artichoke hearts around the chicken. Reduce heat and simmer until chicken is cooked through.
Serve garnished with fresh parsley.
