Ingredients
1 can (14 oz) coconut milk
1/4 cup sugar
2 teaspoons gelatin
3 tablespoons cold water
2 ripe mangoes, peeled and cubed
2 tablespoons sugar
Juice of 1/2 lime
Directions
Sprinkle gelatin over cold water in a bowl and let it bloom for 5 minutes.
Heat coconut milk and sugar in a saucepan over medium heat until sugar dissolves and the mixture is hot but not boiling.
Remove from heat and stir in the bloomed gelatin until fully dissolved.
Pour the mixture into serving glasses, leaving room for the puree. Chill in the refrigerator until set, about 3-4 hours.
Blend mango cubes, sugar, and lime juice until smooth.
Once the panna cotta has set, spoon the mango puree over the top of each serving.
Chill the completed desserts for at least one hour to allow the flavors to meld. Garnish with a sprig of mint or coconut flakes if desired.
