Ingredients
4 slices of sourdough bread
2 ripe avocados
4 eggs
4 oz smoked salmon
1 tablespoon white vinegar (for poaching eggs)
Fresh dill, for garnish
Lemon wedges, for serving
Salt and freshly ground black pepper
Directions
Halve the avocados, remove the pits, and scoop the flesh into a bowl.
Mash the avocado with a fork until creamy. Season with salt and pepper.
Fill a pot with about 3 inches of water, add the vinegar, and bring to a simmer.
Crack each egg into a small cup. Gently drop the eggs into the simmering water.
Cook for about 3-4 minutes until the egg whites are set but yolks are still runny.
Remove with a slotted spoon and set on a paper towel to drain.
Toast the sourdough bread slices until golden brown.
Spread a generous amount of mashed avocado on each slice.
Top each with a slice of smoked salmon and a poached egg.
Garnish with fresh dill and a squeeze of lemon.
Serve immediately with extra lemon wedges on the side.
