Enjoy the freshness of spring with this herb-crusted salmon, served alongside tender asparagus for a nutritious and delicious meal.
4 salmon fillets (about 6 oz each)
1 lb asparagus, trimmed
1/4 cup breadcrumbs
1/4 cup finely chopped herbs (parsley, dill, or basil)
2 tbsp Dijon mustard
2 tbsp olive oil
Salt and pepper to taste
Lemon wedges, for serving
Preheat the oven to 400°F (200°C).
Place salmon on a greased baking sheet. Brush each fillet with Dijon mustard.
In a bowl, mix breadcrumbs with chopped herbs, salt, and pepper. Press this mixture onto the mustard-coated salmon.
Toss asparagus in olive oil, salt, and pepper, and arrange around the salmon on the baking sheet.
Bake for about 15-20 minutes, until salmon is cooked through and asparagus is tender.
Serve with lemon wedges.
