Light yet flavorful, this pea and mint soup is a refreshing starter or light meal perfect for the spring season
2 cups fresh or frozen peas
4 cups vegetable broth
1/4 cup fresh mint leaves
1 onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Cream, for garnish (optional)
In a pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
Add peas and vegetable broth, bringing to a boil. Reduce heat and simmer for 15 minutes.
Add mint leaves, then puree the soup with an immersion blender until smooth.
Season with salt and pepper. Serve hot, garnished with a swirl of cream if desired.
